French Fried Summer Squash
You’ve probably seen these served as appetizers in pubs and restaurants, but they’re just as good at home. Super simple to make too!
Ingredients
- 1 – 2 summer squash or zucchini
- 2 Tbsp butter or oil
- Salt & Pepper
- 1/4 cup flour
- 1-2 eggs beaten
- Breadcrumbs
Instructions
- Cut the ends off the squash and slice the squash into french fry-shaped sticks (leave the skin on unless the skin is tough)
- Sprinkle squash sticks with salt & pepper and toss in flour to coat
- Dip each stick in the egg and roll in breadcrumbs to coat thoroughly
- Heat butter or oil in a pan until a droplet of water dances in it
- Add coated sticks to butter/oil and fry for approximately 2-3 minutes (until coating starts to brown)
- Remove from pan and drain on a paper towel
- Serve hot
