Spicy Summer Squash Dip Recipe
Ingredients
- 1 Medium-size summer squash
- ¼-Cup vinegar
- 1 Tsp salt
- 1 Medium-size onion, peeled and grated
- ¼-Cup sour cream
- Hot Sauce (Tabasco, Sirachi, Frank's, etc.) sauce to taste
Instructions
- Finely grate the squash into a shallow bowl.
- Stir in 3 tablespoons vinegar and the salt.
- Fit a small plate over the squash and weigh down with a heavy pot or jar.
- Let stand 1 hour, then pour off the liquid.
- Repeat weighting and draining until most of the liquid has drained from the vegetable.
- Remove the weight and the plate and mix the onion, sour cream, Tabasco and the remaining 1 tablespoon of the vinegar into the squash.
- Cover and refrigerate the dip until needed.
