Spicy Summer Squash Dip Recipe

Ingredients

  • 1 Medium-size summer squash
  • ¼-Cup vinegar
  • 1 Tsp salt
  • 1 Medium-size onion, peeled and grated
  • ¼-Cup sour cream
  • Hot Sauce (Tabasco, Sirachi, Frank's, etc.) sauce to taste

Instructions

  1. Finely grate the squash into a shallow bowl.
  2. Stir in 3 tablespoons vinegar and the salt.
  3. Fit a small plate over the squash and weigh down with a heavy pot or jar.
  4. Let stand 1 hour, then pour off the liquid.
  5. Repeat weighting and draining until most of the liquid has drained from the vegetable.
  6. Remove the weight and the plate and mix the onion, sour cream, Tabasco and the remaining 1 tablespoon of the vinegar into the squash.
  7. Cover and refrigerate the dip until needed.
