Zucchini Delight Recipe

I don’t know why the author of this recipe called it “delight”, but I have to assume it has something to do with how easy it is to make and how good it tastes. I use this one as a side dish for all sorts of chicken and beef recipes.

Zucchini ‘Delight’ Recipe

Ingredients

  • 1½ lbs baby zucchini
  • ½ cup onion sliced as thinly as possible
  • ¼ cup olive oil
  • 2 Tbsp minced garlic
  • 1 large (2lbs) can imported tomatoes
  • 1 tsp salt
  • 1½ tsp pepper
  • ¼ cup fresh basil or 2 tsp dried basil

Instructions

  1. Slice the zucchini and onion as thinly as possible. If you have a food processor with slicing blade, that works great.
  2. Chop tomatoes into chunks.
  3. Heat oil in a large, ovenproof pot and add onions.
  4. Once onion become soft and start to turn color, add garlic and saute quickly.
  5. Add chopped tomatoes and reduce heat. Simmer for 20 minutes.
  6. While mixture is simmering, preheat oven to 350&deg.
  7. Add zucchini, salt, pepper, and basil to simmering pot. Mix well.
  8. Place pot in oven, uncovered. Cook 30 minutes. If there is too much liquid continue cooking until it is sauce-like.
