Zucchini Delight Recipe
I don’t know why the author of this recipe called it “delight”, but I have to assume it has something to do with how easy it is to make and how good it tastes. I use this one as a side dish for all sorts of chicken and beef recipes.

- 2 Tbsp minced garlic
- 1 large (2lbs) can imported tomatoes
- 1 tsp salt

- Heat oil in a large, ovenproof pot and add onions.
- Once onion become soft and start to turn color, add garlic and saute quickly.
- Add chopped tomatoes and reduce heat. Simmer for 20 minutes.
- While mixture is simmering, preheat oven to 350°.
