Avocado-Mushroom-Zucchini Salad
Here’s a fresh and tangy salad that only takes a couple of minutes to make. It’s particularly good in early summer when avocados are in season
Avocado-Mushroom-Zucchini Salad

Ingredients
- 1/2 lb. fresh mushrooms,
- 1 avocado
- 1/4 cup green onion
- 1 small zucchini
- 1 tomato
Instructions
- Slice all the vegetables into uniform pieces and combine in a large bowl
- Toss with an oil & balsamic, vinaigrette, or Italian dressing and serve
Easy Vinaigrette Dressing
- 4 Tbsp. olive oil
- 2 Tbsp. red wine vinegar
- 1 tsp. sugar
- 1/2 tsp. dried marjoram
- 1/2 tsp. salt
- 1/2 tsp. pepper
Instructions
- Mix all the ingredients in a small bowl and let stand for a few minutes before serving to allow the flavor to mingle
