Here’s a fresh and tangy salad that only takes a couple of minutes to make. It’s particularly good in early summer when avocados are in season

Avocado-Mushroom-Zucchini Salad

Prep Time: 10 min | Oven: N/A | Cook Time: N/A | Serves: 2

Ingredients

  • 1/2 lb. fresh mushrooms,
  • 1 avocado
  • 1/4 cup green onion
  • 1 small zucchini
  • 1 tomato

Instructions

  1. Slice all the vegetables into uniform pieces and combine in a large bowl
  2. Toss with an oil & balsamic, vinaigrette, or Italian dressing and serve

Easy Vinaigrette Dressing

  • 4 Tbsp. olive oil
  • 2 Tbsp. red wine vinegar
  • 1 tsp. sugar
  • 1/2 tsp. dried marjoram
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Instructions

  1. Mix all the ingredients in a small bowl and let stand for a few minutes before serving to allow the flavor to mingle
