Here's a fresh and tangy salad that only takes a couple of minutes to make. It's particularly good in late spring or early summer when avocados are in season

There are all kinds of zucchini layer or lasagna-style dishes. I like this particular recipe because it's like a lasagna without the extra carbs from noodles.
Squash-Tomato Cassoulet Recipe
This recipe came to me via my husband's grandmother. It's one of my favorites because I can make it the night before and pop it in the oven the next day.

Calabacitas is a Mexican style dish that uses small, green summer squash. I've found, however, that any type of summer squash—green, yellow, etc.—works well.
Creole Style Summer Squash
A spicy dish that's a good way to use larger squash. While I have it listed as a side dish, it's hearty enough to work as a main course as well.
